Maxi Thermofoodpro SuperChef Recipe: Spicy Red Pepper and Tomato Soup


Trying to cook wholesome meals which the whole family will enjoy, as well as keep up with a career is always a struggle.  Well recently I bought a Maxi ThermoFoodPro SuperChef, and life is much easier!  Now, all of our meals are cooked from scratch, no more packet meals.  And it's oh so quick an easy!  Here is a recipe I came up with last week - we've had it twice and the whole family LOVES it!  Add more or less chilli flakes, depending on how spicy you family likes it.  Enjoy! 

Ingredients:
1 tbspn  olive oil
1/2 brown onion
2 cloves garlic
1 large red pepper
2 large tomatoes, quartered
1/2 teaspoon fresh lemon juice
1/2 teaspoon balsamic vinegar
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt
freshly ground black pepper

Method:
1. Chop 100gm of red pepper into 1 x 2 cm pieces.  Set aside. 

2. Put onion and garlic into SuperChef bowl and chop on
• Speed :  8
• Time_  20 seconds

3.   Add oil and sauté on
• Temp:  100
• Speed:  1
• Time: 4 mins

4.   Chop remaining red pepper into quarters, remove seeds and stem.  Add to bowl with tomatoes and chop:
• Speed:  8
• Time:  15 seconds

5. Cook:
• Temp:  100
• Time:  3 mins
• Speed:  1

6.   Insert mixing tool.  Add other ingredients, including chopped red pepper  Cook: 
• Temp:  100
• Speed:  2
• Time:  10 mins

7.   Add cream 1 minute before finished cooking.  Add salt to taste.
